With a little patience, you can easily brew kombucha yourself. This guide shows you step-by-step how to turn tea, sugar, and a SCOBY into your own kombucha – from the first fermentation to the finished, sparkling bottle.

Step 1: Basic Recipe for 2 Liters
- 1.6 L water
- 100 g sugar
- 10 g tea
- Steep the tea at 90 °C for 4 minutes, then let it cool.
- Add your starter liquid (SCOBY).
- Cover the jar with a cloth.
- Ferment for 7 to 12 days. Taste daily starting from day 7.
Step 2: Before bottling
Save at least 300 ml of the finished kombucha. This way, you'll have starter liquid for your next batches and can start your own SCOBY hotel.
Step 3: Flavoring & Carbonating
Add your favorite fruit juice, fresh herbs, or spices to the kombucha. Then, pour it into sealable bottles and let them sit at room temperature for about 2 days to carbonate.
Step 4: Chill & Enjoy
Place the bottles in the refrigerator for at least 4 hours before opening. Carefully release pressure if necessary. Done – now enjoy!
