Health authorities, including the World Health Organization, now clearly state that no alcohol consumption can be considered completely risk-free – and this message has changed many people's thinking about a night out. Terms like "Dry January" circulate in the media every year, representing a conscious, alcohol-free lifestyle.

Relaxation without the buzz
The desire for a special drink in hand has not disappeared – whether on weekends with friends in the park or at the bar with colleagues. So, can a good evening also happen without alcohol? Absolutely. Non-alcoholic fermented beverages like kombucha are one of the more exciting answers: something with real character in the glass, instead of a standard sweet soda.

A rapidly growing market
The numbers confirm what we observe at markets and tastings. The global market for fermented beverages grew from around 748 billion USD in 2015 to approximately 1,062 billion USD in 2023. Specifically for kombucha, market volume is projected to grow from around 2.1 billion USD in 2022 to approximately 6.1 billion USD by 2028. This growth is driven by demand for organic ingredients and beverages with less sugar.
