A drink with disputed origins
Where kombucha actually comes from is still debated today – China, Japan, Korea or Russia. It is striking that this fermented tea was highly valued in all these cultures. Just as we have changed over the centuries, fermentation has also changed – or rather, our understanding of it.

The gut microbiome
Our digestive system is home to up to 100 trillion microorganisms – an entire ecosystem that science is still exploring. The gut is sometimes called our "second brain". Research into the microbiome is currently very active, and much of it is still open.
